Good Morning with Granola :)

I must admit I have never been a breakfast person, for me good strong coffee and orange juice is the best thing in the morning. However I do love my good old  porridge with honey and on Sundays we usually  have eggs. I have to confess,  once and again we love English breakfast:)))
So when I visited one of my acupuncture sessions I was told that I must include good breakfast in my healthy diet. So means goodbye sausages, fried eggs and bacon. I started to look for alternatives.
My first day of healthy diet consisted of two prunes and espresso:) Well, at least something:)
And then....I discovered Granola. I knew that such a thing existed in all supermarkets as a dry product, but I wanted my own baked granola.
So I'm going to share this my very favourite breakfast recipe. I haven't created the recipe from scratch, but added my own stamp by adding or removing an extra ingredients. Some of my friends already enjoying this healthy breakfast. Only Jason does not agry with such a "rabbit food" its too much nuts and seeds for him :) But I do love to have it with plain Greek yogurt, spoon of honey and topped with 3 spoons of granola.Heaven!..Enjoy!


2tbsp.vegetable oil
125 ml.maple syrup
2tbsp.honey
1tsp.vanilla extract

300g.rolled oats
50g.sunflower seeds
4tbsp. sesame seeds
50g.pumpkin seeds
100g.flaked almonds
100g.dried berries(cranberries,etc.)
Method:
1.Heat oven to 150C.Mix the oil, maple syrup, honey and vanilla in a large bowl.Tip in all remaining ingredients, except dried fruit. And mix well.
2.Tip the granola onto two baking sheets and spread evenly. Bake for 15 min.then mix in dried fruit(you can leave dried fruit out, and bake it with out, then use fresh berries with your granola like blueberries,or wherever is in the season)and bake for 10-15 min.more. Remove and scrap onto flat tray to cool. Serve with cold milk or yogurt. The granola can be stored in an airtight container for up to a month.
Nutrition:259 kcalories.6g.protein.28g.carbs.15g.fat and 13g.sugar.So is not that bad at all:) You can buy all the ingredients at the healthy food stores, but I found it cheaper if you buy from the supermarkets at  the baking ingredients section.xxxx
